Couscous – sometimes called kusksi, kseksu or cous cous is made from the steamed, dried and cracked grains of durum wheat, Couscous is good with spicy stews.

1 1/4 cups water or stock to 1 cup couscous. Boil the liquid, remove from the heat and stir in the couscous, cover with a tea towel and allow to stand for 5 minutes. Remove the towel, fluff with a fork and season to taste, serve hot or cold.
